Cool Asian Cucumber Salad

2 Cucumbers (Large)1 Red Bell Pepper4 Scallions (Green Onions)4 tsp Sugar2 tbsp Rice Wine Vinegar1/2 cup waterToasted Sesame Seeds (Optional)
1. Dice the cucumbers and pepper. Cut the scallions into small pieces. Mix and set aside in a bowl.
2. Heat the vinegar, sugar and water in a saucepan until the sugar dissolves. Increase heat and simmer rapidly for 3-4 minutes, or until thickened.
3. Pour sauce over the vegetables and mix thoroughly. Chill in the fridge for 30 minutes before serving.
4. For added flavor and garnish, top with toasted sesame seeds.
