Pesto Chicken and Pasta

Nonstick vegetable cooking spray1/2 tsp olive oil8 oz boneless, skinless chicken breast, cut into 1" pieces1/4 cup diced onion 1/2 can water-packed artichoke hearts, drained, sliced2 tbsp basil pesto2 tbsp low-fat sour cream4oz pasta shapes such as penne 2 tbsp Parmesan cheese
In a skillet sprayed with nonstick vegetable cooking spray, over medium-high heat, add olive oil. When hot, add chicken pieces and cook 4 to 5 minutes, or until done. Transfer chicken pieces to a plate and set aside.
Add onion to the skillet and saute until softened.
Add artichoke hearts, basil pesto, and low-fat sour cream. Stir well and add back chicken pieces.
Add cooked penne pasta and mix well. Sprinkle Parmesan cheese on top.
Optional- add diced tomatoes for color and flavor.
Makes 2 servings.
