Zucchini Bread

Ingredients
4 eggs3/4 vegetable oil or canola oil3 cups flour1/2 cup brown sugar, packed1 1/2 tsp baking soda3/4 tsp baking powderdash of salt2 tsp ground cinnamon2 cups of grated zucchini1 tsp vanilla extract
Directions
Preheat oven to 350 degrees
1. Beat eggs.
2 Gradually beat in sugar, then oil.
3. Combine dry ingredients and add to sugar mixture alternatively with zucchini.
4 Stir in vanilla.
5. Turn into greased and floured 9" tube pan.
6. Bake at 350 degrees for 50 minutes.
7. Let stand for 10 minutes
8. Turn out and cool.
