wild mushroom risotto

Ingredients
• 1-ounce dried morel mushrooms• 1/2 pound fresh porcini or cremini mushrooms• 4 cups chicken stock, preferably homemade • 1 package of dried wild mushrooms reconstitued in hot water• 2 ounces ham diced• 1/2 cup onino• 1 1/2 cups Arborio rice• 1/2 cup dry white wine• 2 teaspoon thyme• 1 teaspoon kosher salt• 1/2 teaspoon freshly ground black pepper• 2/3 cup freshly grated Parmesan cheese, plus extra for servingDirections
Directions
Bring broth to a l;ow simmer in the meantime saute ham garlic onion and sliced fresh mushrooms in oil until brwon. Add rice and stir to coat evenly with oil. Deglaze pan with white wine. Add Thyme, reconstituted mushrooms and their broth (run through coffee filter to eliminate dirt and debris) ladle broth by 1 ladle full gradually letting rice absorb liquid before adding more approx 20-30 minutes total time. finish with parm sheese
