Fusion Pork Medallions

Ingredients
1 lb Pork Tenderloin, 16 oz , trimmed 3/4 tsp Chili powder1/2 tsp Salt1/4 tsp Sugar1/4 tsp Cumin (ground)1/8 tsp Allspice2 Tbsp Jalapeno Pepper Jelly1 tsp Lime, Juice2 tsp olive oil
Directions
1. Cut pork crosswise into 8 equal pieces. Combine chili powder and next 4 ingredients (through allspice) in a small bowl; rub evenly over both sides of pork. Combine jelly and lime juice; set aside.

2. Heat oil in large heavy skillet over med-high heat. Add pork to pan; cook 1 min. on each side. Brush pork with 1/2 of jelly mixture; turn and brush with remaining jelly mixture. Cook 1 min. on each side or until desired degree of doneness.

3. Remove pork from pan; let stand for 5 minutes before serving.

4 servings (2 medallions each).

    I made this for a 5 LB cut of tenderloin (adjusted the mounts accordingly). This is the best pork tenderloin I have ever made. This did not dry out and made excellent leftovers the next day (put on the grill for a few). I will make this again. - 8/2/10
