Stuffed Pork Tenderloin

1 T. All-purpose flour1 lb. Pork tenderloin1 T. Becel1 1/2 c. onion, chopped1/2 c. celery, diced1/4 c. carrot, shredded2 t. garlic, choppeddash of thymedash of black pepper1 1/2 c. Wild rice, cooked1 T. Canola Oil
1. Cut tenderloin lengthwise, stopping about 1/2 inch from cutting through. Open the split and flatten the meat out.
2. Saute onions, garlic, celery, carrot and seasonings in Becel until tender. Add cooked wild rice; stir to combine. Spread stuffing mixture over split meat. Fold meat back over itself. Tie with kitchen string.
3. Roll the meat in flour. Heat oil in pan and brown on all sides.
4. Bake at 350 until meat reaches an internal temperature of 160, about 1 hour.
5. Rest for 10 minutes. Slice and serve.
