Lentil Soup

Ingredients
1 bag lentils, dry 2 1/2 boxes chicken stock, 32 oz2 lg fresh tomatoes (peeled and chopped)2 cloves garlic, crushed1 c carrots, chopped1 md onion, chopped2 c celery, chopped2 banana pepper, seeded chopped1 tbs ground cumin2 tsp thyme1/2 c fresh parsley, chopped1 tsp curry powder salt and pepper to taste
Directions
makes about 20 1 cup servings

Sort and wash lentils, put in large dutch oven or pot add chicken (vegtable) stock, add all vegtables. Bring to a slow boil, reduce heat and simmer for about 1 hour or until all is tender. Add seasonings and continue to simmer for another 30 minutes.
