Curried Cauliflower

5 c. cauliflower in small pieces1.5 c. tomato chopped7 c. cabbage shredded1.5 c. snow peas1 c. red onion finely chopped1 clove garlic1 Tbsp chopped fresh cilantro leaves1/2 tsp ginger1/2 tsp turmeric1/2 tsp cayenne1/4 tsp cinammon1/2 tsp coriander1/2 tsp mustard seed
Put all spices together in a bowl
Heat pan and add onions - once they soften add the spice and blend for a minute. Add tomatoes, blend.
Add the rest. Put on the lid and cook over medium or low medium - checking/stirring every 10 minutes.

Recipe didn't mention oil for saute onion so I sauteed in veg broth. Increased spices. Other than that, delish. Added chick peas, black beans, or leftover chicken to some servings to add protein. - 3/18/11

Thanks! I don't use oil for the onions - and veggie broth is a great idea! We love adding meat to the leftovers - I'll have to try the chick peas. Sound yummy!
