Easy Home Style Chicken Pot Pie

4 Chicken breasts (about 6 oz. each)4 Tbls. Earth Balance1 Cup Diced Carrots1 Cup Diced Onions1 Cup Frozen Peas1/2 Cup FF Milk15 oz HOT WATER1 Tbls Better Than Bouillion Chicken1 Tbls Better Than Bouillion Mushroom5 Tbls of Trader Joes Multi Grain Pancake MixPillsbury Ready Pie CrustBlack Pepper (to taste)
Saute Onions, carrots and Earth Balance until onions are translucent (about 15 minutes). While that is sauteing, cook chicken breast (either steam or boil. Once the chicken is cooked and cooled down a bit, cut into bite size pieces and set aside). Mix 15 ounces of HOT WATER with BETTER THAN BOUILLON Chicken and Mushroom Base. Add that to saute along with milk. Add frozen peas and simmer. Slowly add pancake mix until the liquid starts to thicken a little. Add ground pepper to taste, then Add Chicken and mix together. Empty saute into a 2 QUART Corelle Ceramic Baking Dish. Top with Pillsbury READY PIE CRUST. Crimp (seal) edges to Baking dish and cover the edges with tin foil so as not to burn during baking. Bake at 425o for 40-45 minutes, removing foil in the last 15 minutes. Serve with Mashed Potatoes.
