Nona or Aunt Bernice's Apple Sauce Cake turned Gluten Free

Ingredients
Nona�s or Aunt Bernice�s Apple Sauce Cake2 cups flour (works with Bob�s Red Mills All purpose GF flour)� teaspoon salt1 teaspoon baking soda� cup oil (they called for shortening, but canola has proven to work too.)1 cup sugar2 eggs1 teaspoon cinnamon� teaspoon cloves� teaspoon nut meg (best if grated fresh)1 cup thick applesauce� cup nuts (pecans go naturally well with this)
Directions
I use a bunt pan for this, and frankly cut the cake into 8ths, but as I'm trying to reduce calories, I'll cut this one into 16ths. Keep in mind the calories DO NOT include the icing! Enjoy!

Bake at 350 degrees about 55 minutes.
Ice with caramel icing

Caramel icing
1 cup brown sugar
1/8 teaspoon salt
2 tablespoons butter (they called for oleo!)
1/3 cup milk
Cook to soft ball stage (235 degrees ? that is per the internet. I always cook this too long and end up with hard candy in a good pot! Will try to gauge it better with a thermometer this next time.)
Beat, adding one teaspoon vanilla, one tablespoon cream. If not thick enough, add powdered sugar.
