onion &Veggetable soup with cheese

1 tbsp extra virgin olive oil1 large onion cut in rings1 carrot diced15 spinach leaves thorn2 tbsp of Knorr veggetable or beef soup mix1 1/2 cup of water1fl oz Whisky scotch (optional)Garnish1 thin Slice of whole wheat bread2 oz of gratted swiss cheese
cook the onion and carrot in the olive oil.
When softten, and the spinnach ant soup mix.
Stir and cook for 2 min
And water (and scotch if wanted) and simmer for 20 min .
Pour in 2 heat-resitant bowls for appittizer Put the piece of breadon the soup ant cover with the cheese
Broil until golden and enjoy.
