warm pesto roast veg

Ingredients
pumpkinred capsicum2 tbsp olive oil4 tbsp basil pesto100g spinach leaves2 tbsp pine nuts1 garlic clove
Directions
preheat oven to 230/210 fan/gas 8

Put all veg in roasting tin with oil, garlic and seasoning of salt and black peppper - then rub with your hands until evening coated
Roast for 30 mins until golden and soft

Allow to cool slightly then tip into a large bowl. mix with basil pesto, spinach leaves and toasted pine nuts, then serve.
