1 med. potato, about 5 oz.1 tsp olive oilcreole seasoning or Old Bay
place potato in the microwave on baked potato setting.
Remove from the microwave and let sit for a few minutes to cool down enough to handle.
Slice the potato in half lengthwise
Slice across each half to make french fries.
Place potato wedges in a bowl and sprinkle with 1 tsp olive oil. Toss very gently with a spatula trying to not break the pieces. Sprinkle with seasoning. Spread the fries on a foil covered baking sheet and bake at 450 for about 20-25 minutes, turning once if desired for extra crispiness.
You can also broil the fries and even cook them in a nonstick skillet! If you break them up a little bit in the skillet, they sure taste yummy with a country breakfast!
