Broccoli Onion Dairy Free Quiche

Ingredients
Prepared Whole Wheat pie crust4 eggs1 cup Coconut Milk2 cups Chopped Broccoli1 med onion chopped3 cloves garlic chopped2 T nutritional yeast2 T Ume Plum Vinegar1 T Granulated Kelp flakes (optional)salt and pepper to taste
Directions
Cook onion and garlic in a little oil to soften ~ 5 minutes.
Place in the bottom of a pie crust.
Add broccoli.
In a separate bowl, mix coconut milk, eggs, nutritional yeast, kelp, vinegar, salt and pepper.
Pour on top of broccoli.
Bake at 375 for 45 minutes or until center is firm when jiggled.
