Best Buttermilk Cornbread Muffins

Ingredients
1 cup butter1-1/3 cups white sugar4 eggs2 cups buttermilk1 teaspoon baking soda2 cups cornmeal2 cups all-purpose flour1 teaspoon salt
Directions
1. Preheat oven to 375 degrees F (175 degrees C).
2. Melt butter in large skillet. Remove from heat and stir in sugar.
3. Add eggs and beat until well blended.
4. Combine buttermilk with baking soda and stir into mixture.
5. Mix dry ingredients (cornmeal, flour, and salt) and add to mixture until well blended.
6. Pour batter into lightly greased "mini muffin" pans.
7. Bake in the preheated oven for 22-24 minutes, or until a toothpick inserted in the center comes out clean.

    These were delicious if you like the sweet yellow muffins! I did sub half of the white sugar with Stevia. I came out with 72 minimuff (not 26!) not quite sure why. The size is cute and it is great for crowds... - 12/13/15
