Delicious Japanese Eggplant Bisque

Ingredients
* Eggplant (Japanese), fresh, 4 cup, cubes * Light Cream , 1.25 cup * Cream Cheese, 4 oz * Chicken stock, 1 cup * Onions, raw, 1 large * Butter, whipped, 1 tbsp * Parsley, dried, 1 tbsp
Directions
*peel and slice (by mandoline) the eggplant and set aside
*chop onion and sautee in butter until translucent
*add the rest of the ingredients and simmer for about 30 minutes
*blend in blender until smooth

    I modified this recipe. I used 1/4 c. half and half and one cup 2% milk instead of light cream. I also used whipped cream cream cheese. Sautee onions and eggplant together. - 9/7/10
