Italian herb, Garlic, and Onion Baked Chicken

1 vidalia onion, medium, halved and sliced5 tsp minced garlic (can use fresh or jarred)1 tbsp olive oil (OPTIONAL - very juicy if used)2 oz Greek Yogurt1.5 lbs LEAN Chicken Breast, filleted2 tbsp Italian seasoning mix
Preheat oven to 425F. Peel onion, chop in 1/2 and slice. Mince garlic. Combine Onion, garlic, and olive oil in bottom of baking dish. Combine italian seasoning and greek yogurt in a bowl. Fillet chicken breasts and cut off excess fat. Coat chicken in greek yogurt mix (use any left over yogurt as a mix in with the onion and garlic mix in baking dish). Lay coated chicken on top of onions and garlic in baking dish. Cover and put in oven for 30 minutes covered. Uncover and spoon juices over top of chicken. Return to oven for 5 minutes (or until chicken is cooked through).
