Schnitzelbank Bread Pudding

Bread Pudding Ingredient List:2 cups bread cubes (day old bread cut in 1/4 inch squares)2 cups milk3 TBLS butter1/4 c. granulated sugar2 eggs1/2 tsp. salt1 tsp vanilla1/2 tsp. ground cinnamon1/4 tsp. ground nutmegVanilla Sauce:1/2 c. sugar1 TBLS cornstarch1 cup boiling water2 TBLS butter1 tsp vanillaDash Salt
In sauce pan, scald milk, butter and sugar over medium heat. Cool slightly. In bowl, beat eggs and blend thoroughly into milk mixture. Add salt, vanilla cinnamon and nutmeg; mix well.
Place bread cubes in a large, buttered, oven proof casserole dish. Pour milk/egg mixture over bread cubes; toss to coat. Set casserole dish in a pan of hot water. Bake at 350 degrees for 1 hour, or until knife comes out clean. Makes 6 servings.
Serve with vanilla Sauce (see below)
Vanilla Sauce
In saucepan, combine sugar and cornstarch; add water gradually, stirring constantly. Boil for 5 minutes; remove from heat. Add butter, vanilla and salt. Stir until butter has melted and serve hot. Makes 1 cup of sauce
Can be topped with fresh fruit - blackberries work well! I love this recipe, the bread pudding alone is just under 200 calories per serving, so use the vanilla sauce sparingly and eat less calories!
