Turkey Meatloaf Muffins

1 lb. ground turkey1/2 C oatmeal (uncooked)1/2 C chopped celery1 Tbsp olive oil1 C chopped onion1/2 C chopped green pepper1/2 C chopped carrot2 cloves garlic1 can no salt added diced tomatoes2 egg whites
Heat oven to 350F.
Chop vegetables. Saute all but the tomatoes and garlic in a lightly oiled pan until done but not mushy. Cool vegetables.
Combined ground turkey, oats, cooled cooked vegetables, and egg whites.
Spoon the meat mixture into a muffin tin sprayed with vegetable spray.
Bake in 350F oven for 40 minutes.
Makes 12 muffin meatloaves.

I loved this recipe. I made a whole batch and made traditional meat loaf for my family. I froze the rest of the meat loaf muffins individually. So , I could just take one out and warm it up in the microwave for my lunches with a baked potato. It was wonderful. I will definately make theese again! - 1/6/11
