Thyme & Goat Cheese Hummus

Ingredients
1 (15 oz) can of garbanzo beans, drained and rinsed2 oz goat cheese1 cup spinach1 T lemon juice1 tsp thyme (dried)1-2 T garlic (to taste)water as needed to thin
Directions
Combine everything in a blender and process until smooth. Add water as needed to thin the mixture to your desired consistency.

Serve with fresh veggies, crackers, toast, pita, on sandwiches, or mixed into stir-fries and salads.

Makes approximately 8 two Tablespoon servings.
