Chicken, Beans, and Rice - With a Kick!

2 T Extra Virgin Olive Oil1 Whole Chicken Breast, cut into bite-size pieces3 T Chili Powder1 Green Bell Pepper, chopped1 Can Red Kidney Beans1/2 Large Tomato, chopped1/4 Cup Hot Cherry Peppers, chopped2 t Blackened Seasoning1 Box Rice-A-Roni Savory Whole Grains Spanish RiceA few splashes of Lime Juice
Cook Rice-A-Roni according to box instructions.
Heat EVOO in a large skillet over medium heat.
Add Chicken and Chili Powder. Stir to coat chicken and cook until outside of chicken is completely white.
Add Green Bell Pepper, Red Kidney Beans, Tomato, and Hot Cherry Peppers. Stir to combine evenly. Add Blackened Seasoning.
Simmer, stirring occasionally, until rice is finished cooking.
Add rice to skillet. Stir to combine.
Add a few splashes of Lime Juice and serve.
Makes 5 servings (approx 1.5 cups each).
