Cheesy Tofu & Veggie Quiche

Ingredients
3 eggs220g tofu50g asparagus50g red pepper50g onions100g courgette60g parmesan
Directions
Dry fry veggies.

Mix tofu and eggs on blender - add herbs / seasong as desired

Put vegetables in shallow dish

Pour tofu mix on top

Sprinkle parmesan

Bake in hot over until top turns brown - about 30 mins
