Black Bean and Corn Salad

Ingredients
1 can (15 oz) black beans, rinsed and drained2 c frozen corn kernals1 small red bell pepper, seeded and chopped1/2 red onion, chopped1 1/2 tsp ground cumin2 tsp tabasco saucejuice of 1 lime2 tbsp olive oil
Directions
Combine all ingredients in a bowl.
Let stand for 15 min, then toss and serve.

Makes approx 4 cups (serving size, 1 c)

    Yummy - made is as a salsa and the family tore it up. Which I found funny because my oldest daughter saw me making it and made the comment that she wouldn't touch it. Then when I placed it in an salsa bowl, surrounds it with tortilla chips, she was the first one to say, WOW, this is good. - 9/5/10
