SD: Chicken Fajita Orzo

Ingredients
1 lb. whole wheat orzo or other small size pasta1 lb. boneless, skinless, chicken breasts, cubed2 large red bell peppers, diced1 large red onion, sliced thin4 med tomatoes, finely chopped1/4 c. diced green onions1 jalapeno pepper, seeded & minced3/4 c. lime juice1/2 tsp.salt6 TB. fat free sour cream
Directions
Prepare pasta according to directions, drain, and set aside.

Meanwhile, in a skillet, cook the chicken over medium-high heat. Add the red bell peppers and onions, and cook until chicken and veggies are cooked-- about 5 more minutes.

In a med bowl make the salsa-- mix tomatoes, green onions, jalapeno, lime juice, and salt.

Toss together the cooked pasta, salsa, and chicken mixture until well incorporated.

Top each serving w/ a TB of sour cream

    I substituted brown rice, because we have to eat gluten free, but I thought this was tasty. Some would probably want more heat, but you could always add more jalopeno. - 7/21/08
