Massaged Kale Salad

1 bunch of kale, stems removed, chopped1/2 tsp of salt2 carrots, peeled and shredded1/2 granny smith apple, cut into thin slices1/2 avocado, dicedJuice of 1/2 lemon1 tsp olive oilhandful of raisins (I used 30g)
Place chopped kale in large bowl and sprinkle 1/2 tsp salt over it. Massage the kale with clean hands for about 2 minutes. The kale will start to soften and break down. Add shredded carrots, apple slices, and chopped avocado. Squeeze juice of 1/2 lemon over salad and drizzle a little olive oil over it (I used 1 tsp). Add handful of raisins. Toss salad. Serve.
Note: This meal isn't exactly low in sodium because of the amount of salt used to break down kale. If you are watching sodium you may want to use less, but I'm not sure if it would soften the kale as much.
