Healthy Blueberry Muffins

Ingredients
3/4 c. fat free milk1/2 c. natural applesauce1 egg1 tsp. vanillaMix above ingredients together in a small bowl1/2 c. all purpose flour1/2 c. whole wheat flour1/2 c. rolled oats1/2 c. cornmeal1/2 c. brown sugar3 tsp baking powder1 tsp salt1/2 tsp cinnamonzest of 1 lemonMix dry ingredients with a fork in a med size bowl.
Directions
Make a well in the dry ingredients bowl and pour wet into it.
Stir with a spoon just until flour is moistened (batter will be lumpy). Fold in blueberries. Spray muffin tin or use liners.
Oven temp at 400 degrees. Mini muffins cook in 10 min.
makes 36 mini muffins or 12 full size muffins, cook for 18 min. Immediately remove from pan to cool.
