Squash fritters

Ingredients
3 cups summer squash, shredded or jullienned4 medium scallions, chopped2 tbsp grated cheese (cheddar or parmesan)2 eggs, beaten1/4 cup flour1 tbsp melted buttersalt and pepper to tasteolive oil for frying
Directions
Shred or julliene the summer squash.

Place the squash in a collander, salt it and let it stand to drain 20 minutes.

Squeeze the remaining liquid from the squash and place in a mixing bowl.

Add 4 medium scallions, chopped.
Mix in 2 eggs, beaten along with the flour, cheese, seasonings, and melted butter.

Heat oil in skillet.

Spoon squash mixture into skillet to form patties.
Saute until brown on both sides.

Serve warm.
