Creamed Carrots and Green Onions

Ingredients
1 1/2 cups baby carrots2 or 3 green onions, chopped1 Tbsp light margarine6 Tbsp fat free sour cream1/4 cup skim milk
Directions
Boil carrots and onion together until crisp/tender (about ten minutes). Drain. Leave it in the colander until you've melted the margarine in the pot, then add the sour cream. Drizzle milk, stirring, into the cream mixture until it's smooth (but not too thin). Add carrots and onions to the cream and toss.

Makes 3 1/2 cup servings.
