Strawberry Vinaigrette

Ingredients
1 cup sugar free strawberry preserves1/4 cup balsamic vinegar1/4 cup Dijon mustard1/2 to 1 tsp ground pepper1/2 c olive oilWater
Directions
In a medium bowl, using a wire whisk, whip together the preserves, vinegar, mustard and pepper, until throughly emulsified.
Gradually whisk in 1/2 cup olive, then 1/2 cup water (more if desired).

Makes 2 1/2 cups, or 20 servings (2 Tbl).
