Cauliflower or Mock Potato Salad

Ingredients
1 large head cauliflower5 tbsp light mayonnaise 1/4 cup milk, nonfat6 tsp Splenda2 tsp yellow mustard2/3 tbsp cider vinegar
Directions
Cut cauliflower into florets.
Mix remaining ingredients together and pour over cauliflower.

    This recipe as is leaves something to be desired. You don't serve potato salad raw! I made modifications by lightly steaming cauliflower (until barely soft NOT mushy!), adding diced celery, onion, chopped egg, & used cream instead of milk to lower carb count.Turned out MUCH better than above recipe! - 11/16/08

    I used to make something similar to this years ago back in the 60's when I first started with Weight Watchers. It was great, and I DID add the normal things like egg and pickles. Dividing it and ate it in several portions. - 3/24/10

    my sister made this a few years back and it was wonderful she added the celery and some egg same as reg potato salad in fact my nephew was upset after eating two large helpings because he found out and he "does not like cauliflower" lol funny did not mind while he was eating it. - 11/16/08

    I find the exclusion of fats a bit troubling since they are required in any diet and the use of artificial sweeteners is verboten in my house since they create an increased desire to eat. I make this however I use regular products since the quatities are small. Buttermilk will add an addtional layer - 3/24/10

    I used half Best Foos Canola mayo and half low fat sour cream to reduce the calories. Also added an egg, celery and green onion. Yum! This is great at lunchtime. - 3/23/08

    I am confused why people keep referring to it as a mock mashed potatoes recipe.. it says mock potato salad.. i agree that it makes more sense to cook the cauliflower a little before.. - 11/17/08

    A good beginning, but where are the veggies? Pimiento or bell pepper, celery, onion, pickles, eggs - dill, anything you would put in potato salad is great in this cauliflower salad. Oh, and if you are trying to mimic potato salad, then you need to cook the cauliflower - who wants raw potato salad? - 3/23/08

    I absolutely love this. Have had it every week and even made it for Easter. My son liked it too. I also use the "sauce" and mix with a bag of premade cole slaw it is wonderful and even lower in calories (if that is possible!) - 3/23/08

    I didn't call it "mock mashed potatoes" when I served it to my family. Instead I referred to it as a new cauliflower recipe I wanted to try. So no one was comparing it to mashed potatoes and loved it! Hahaha! :-) - 3/23/08

    I tried it with raw cauliflower, somewhat OK will try it again next time with Cauli lightly steamed.
