Green beans with Lentils

Ingredients
Directions
1lb Green beans1 cup dry lentils1 tbsp EVOO1tbsp red win vinegar1 tbsp dijon mustarddried thyme
Cover lentils by about 2 inches of water in saucepan and bring water to a boil. Then cover and allow lentils to simmer 20 minutes until slightly al dente.
While lentils are cooking prep green beans and plunge into boiling water one handful at a time for about 5 minutes. Strain under cool water to stop carry over cooking.
Mix remaining ingredients in a seperate bowl to make dressing.
Combine all ingredients and allow to chill one hour before serving.
Makes 5 servings.
