Ingredients
16 slices Oroweat Jewish Rye Bread (mild flavor)8 slices Kraft 2% Swiss cheese8 (1 oz or 28 gram) slices deli corned beef1 can sauerkraut, drained (yields about 1 compacted cup)1 tbsp pickle relish1 tbsp ketchup 4 tbsp light mayo2 tbsp butter (slice while cold divide into 16 portions and softened)
Directions
Mix together the pickle relish, ketchup, and mayo in a bowl. For each sandwich, use two slices of bread. Spread about 3/4 teaspoon on one slice of bread. Layer the cheese, about 2 tbsp of kraut, 1 slice of corned beef on another slice of bread. Put the bread with the sauce on top of the corned beef with the sauce side on top of the meat. Spread 1/4 tbsp of butter on the outside of the top slice. Place butter side down in preheated skillet or on griddle. Put another 1/4 tbsp of butter on the bread that is on top. Brown 2-3 minutes per side. Yields 8 sandwiches.
