Skillet Spinach

Ingredients
Coriander leaf, dried, 1 tbsp or 1 tablespoon powderCumin seed, 1 tspOnions, raw, 1 large Spinach, fresh, 2 bunchesCilantro, raw, 4 tbsp Tumeric, 1 teaspoonGaram masala, 1 teaspoonjalapeno, 1 medium sizeNote: Coriander leaf can be substituted with powder.Garam masala, Jalapeno's, and cilantro are optional depending on taste.
Directions
Add 1/4 cut water in large skillet turned on medium heat. When water is boiling, add cumin seed.

After 10 seconds of cumin seed sizzling, add the large onion (more or less depending on taste) sliced thin. Cook onions on medium heat until golden brown (add water when needed to keep from sticking or burning).

Add 1/2 tsp tumeric and 1 tablespoon of coriander powder. Stir well.

Add fresh spinach chopped to desired size and 1 cup of water. Cook spinach until tender or desired (I generally do 20 minutes). Add more water for desired consistency if needed.

Add jalapeno's, garam masala, and diced cilantro as garnish. Salt and pepper if desired to taste.

For variation, can also add or substitute endive or other vegetable in place of spinach.
