New Hampshire Beef Stew {crock-pot}

Ingredients
18 ounces of Stew Beef6 cups of zucchini3 cups of chopped tomatoes 2.5 cups of red peppers {can mix with yellow and orange also}.75 chopped white onion4 tbsp fresh chives3 tbsp fresh oregano2 tbsp fresh basil4 tbsp olive oil
Directions
8 servings {approximately 1-2 cups each} Measure the final amount and break down into 8 servings. The end amount is determined by how much it breaks down while cooking and how much "gravy or broth" is left.

Saute' onion, peppers, and tomato in olive oil until tender, add to crock. Take stew beef brown lightly in olive oil add to crock. Add remaining ingredients to crock turn on low cook for 6-8 hours.
