Bran Muffins

Ingredients
1/4 c. Egg beaters2 Tablespoons Applesauce1 container (6ozs) low fat flavored yogurt(your choice)1/4 c. fruit juice (your choice)1/4 c. Canola oil3 teaspoons cinnamon1 Cup whole wheat flour1 cup wheat or oat bran1 1/4 teaspoon baking soda1/2 cup raisins, packed1/2 cup chopped datesWalnuts ( whole or pieces) for top of muffins1 apple chopped (remove skin prior to chopping
Directions
spray only BOTTOMS of muffin pans with Pam. Preheat oven 375 degrees.
Mix egg beaters, juice, yogurt, oil, and applesauce. Sift flour and baking soda, add to bran. Add dry ingredients to liquid ingredients and stir well. Add cinnamon, raisins, chopped dates, and chopped apple to mixture and mix until well combined. Drop into oiled muffin tins. Place few pieces or 1/2 walnut on top of each muffin. Bake for 12-15 minutes. Check after 12 minutes with toothpick for doneness. If batter stays on toothpick, bake for few more minutes.
When done, remove from tins and cool on cooling rack.
Makes 10 muffins.
Note: do not oil sides of muffin tins, as muffins will not rise properly. If needed, run knife around muffins to loosen sides. Turn muffin tins upside down on cooling rack.
