Pat's Chicken Quinoa+ Casserole

1 can Campbell's Healthy Request Cream of Chicken1 cup water1/4 teas. onion powder1/8 teas. black pepper1 cup quinoa (uncooked)1 lb boneless skinless chicken (breast) tenderloins (raw)180g broccoli (fresh or frozen)180g cauliflower (fresh or frozen)1 - 8oz can of mushrooms (stems & pieces) Meijer brand
Preheat oven to 375 degrees
Mix together soup, water, drained mushrooms, onion powder, salt, and pepper in a 9x13 baking dish.
Rinse quinoa well and stir into soup mixture.
Place chicken gently on top of quinoa mixture.
Cover dish with aluminum foil and bake for 1 hour. Uncover and add the broccoli and cauliflower bake another 10 minutes to brown and cooked the veggies.
