Faux Chick'n Salad

Ingredients
1 cup firm tofu, cubed1/2 cup tofu mayonnaise (see recipe I've added)1 stalk celery, finely chopped4 green onions, finely chopped1 Tbsp fresh parsley, minced2 tsp prepared mustard2 tsp soy sauce (or Bragg's)1 garlic clove, crushed and minced
Directions
In a medium bowl, combine mayo, celery, pickles, onions, parsley, mustard, soy sauce and garlic with tofu and toss lightly.

Serve over toast, as a side dish, as a sandwich or wrap filling or alone. For a variation, add 1-2 tsp curry powder to spice it up a bit.

** Makes approximately 2 cups; nutritional info is based on 1/2 cup per serving. **
