Red Curry Thai with chicken

Ingredients
2 bags success 10 min white rice1 cup coconut milk1 Tbsp Thai red curry paste2 tsp brown sugar firmly packed1 tsp lime juice1/4 tsp salt2 cups cooked chicken shredded2 cups cooked carrots (or a bag of Asian frozen vegetables)
Directions
Prepare rice according to package directions.

In a small bowl, combine coconut milk, curry paste, brown sugar, lime juice, and salt. In medium non stick pan over medium heat combine chicken and vegetables and curry sauce. Cook until heated through. Place rice in bowls and top with chicken curry mixture. Garnish with chopped peanuts if desired.
