Chicken Barley Crock Pot casserole

Ingredients
Pearl Barley 1.5 cups raw5 boneless, skinless chicken breast tenders1 shallott1 clove garlic2 tbsp italian seasoning2 tbsp olive oil
Directions
Brown barley in fry pan for 3-5 minutes in 1 tbsp of olive oil. Cut chicken breast tenders into pieces. Place browned barley in crock pot. Next saute garlic, shallotts and chicken in 1 tbsp olive oil. Add this to the barley in the crock pot.

Add 1 can cream of chicken with herb soup and water.
Cook on low until barley is tender. In my crock pot I set it for 6 hours.

Add seasoning to taste if you wish.

Makes 8 or so 1 cup servings

    Seriously! this recipe totally sucked as far as directions are concerned! I followed it to a t...no water...burned on the edges, got home after 5 hours and added 3 cups of chicken stock and scooped out burned portion...turned out yummy but was frusterating to try and follow this recipe - 8/23/10
