Tortillini Salad

Ingredients
4 - 5 cups tri color tortillini1 large bell pepper diced24 grape tomatoes1 small cucumber dicedfresh chives1/4 cup olive oillarge splash cider vinegar (or whatever you prefer)salt and pepper to taste (recipe is based on 1/2 tsp)
Directions
Cook tortillini and then toss all ingredients in bowl. Chill and serve.

This could be changed up quite a bit, adding a bit of Dijon mustard to the oil and vinegar would be good, and olives would be wonderful. This is just a basic recipe that is easily adaptable. You could use any good salad dressing you preferred instead of the oil and vinegar.
