Chicken & Cannellini Beans

Ingredients
Chicken – 1/2 lb cut into bite sized pieces1/2 Cup Onion chopped1/2 Cup Dry Vermouth1 can Cannellini Beans rinsed & drained1 Cup fresh baby spinach1 Tbs Lemon Juice1 Tsp Olive Oil½ Tsp dried rosemary, crushed¼ Tsp crushed red pepper flakesPinch of salt¼ Cup Cherry Tomatoes, optional2 Tbs Parmesan Cheese2 Cups Cooked Brown Rice
Directions
Prepare Brown Rice per package instructions. Prepare remaining while rice cooks.

In Medium skillet (sprayed with cooking spray) over medium high heat, cook chicken until browned and cooked through. Remove from skillet and set aside.

Reduce heat to medium, spray pan again with cooking spray, saute onions until tender. Add Dry Vermouth to deglaze the pan. Add remaining ingredients and warm through, adding tomatoes and chicken in the last few minutes.

Serve in bowl over Brown rice topping with Parmesan Cheese.

Makes 4 hearty and filling portions. Even my kids love this one!!
