Low Carb Flax Meal Pancakes

Ingredients
1/2 cup of ground flax seed meal 2 eggs 1/4 cup of half and half1/4 cup of cottage cheese 2 Tablespoons of cocount oil (or melted butter) 1/4 teaspoon baking powder cinnamon and vanilla to taste
Directions
Mix all ingredients together until batter is smooth. Pour onto preheated griddle until lightly browned, flip and brown second side. Serve as you would your favorite pancakes - but keep it sugar free! Makes 2servings.
