Wheat Germ Muffins

Ingredients
1 cup raisins1.75 whole wheat flour0.75 cup wheat germ0.33 cup granulated sugar1 Tbsp baking powder0.5 tsp salt3 Tbsp oil1.5 cups milk1 egg, beaten
Directions
Pour boiling water over raisins and let stand for 10 minutes; drain.
In bowl, combine flour, wheat germ, sugar, baking powder and salt; stir in raisins. Combine oil, milk and egg; pour into flour mixture and stir just until combined. Spoon into nonstick or paper-lined muffin tins, filling each three-quarters full. Bake in 375 degree Farenheit oven for 18-20 minutes or until firm to the touch.
