Ingredients
1/4 pound ground beef1/2 cup kidney beans, cooked (or pinto beans, or even black beans)1/3 cup frozen corn1/2 cup diced tomatoes with green chilies 1 Tbsp tomato paste (use the rest in juice or freeze it)1/4 cup onions, chopped1/4 cup large green pepper, chopped1 tsp minced garlic1/2 tsp chili powder1/4 tsp cuminsalt & pepper to taste*Optinal ingredients (not calculated) :lowfat shredded cheddar cheese, lowfat sour cream, pickled jalapenos, diced fresh tomatoes, crushed corn chips, sliced green onion.
Directions
Brown ground beef in a large saucepan. When it's completely browned, drain well and rinse the meat in hot water to remove all fat. Set aside. Add onions and green pepper to pan. Saute until tender. Add meat back to pan and add remaining ingredients. Bring to a boil. Lower heat and simmer on low for about an hour, adding water if it gets too dry.
