Coconut and Chia Bread

Ingredients
3 Tbsp butter, softened1/4 cup unsweetened applesauce1/2 cup sugar2 eggs1 teaspoon vanilla extract1 1/4 cup whole wheat flour1/4 cup flaxseed meal2 scoops chia seeds1/3 cup protein powder2 teaspoons baking powder1/2 teaspoon salt3/4 cup milk3/4 cup flaked unsweetened coconut
Directions
In a mixing bowl, cream butter, applesauce and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, protein powder, chia, baking powder and salt; add to creamed mixture alternately with milk. Stir in coconut.

Pour into a greased 9-in x 5-in x 3-in. loaf pan. Bake at 350 for 1 hour or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
