Easy Vegan Blueberry Muffins

1 1/2 cups flour1/2 cup oatmeal1/2 cup sugar or equivalent2 teaspoons baking powder1/4 cup unsweetened applesauce, or oil1 cup regular soy milk (I used Silk Light)1 tablespoon flax seed meal3 tablespoons water1/2 blueberries or to taste
Combine flour, oatmeal, sugar, and baking powder in a mixing bowl. Beat flax seed meal and water, let sit briefly, then combine in a separate bowl with applesauce and soy milk. Mix well. Combine liquids with solids and mix just until combined (over-mixing will make them tough). Add blueberries and once again mix just enough until evenly distributed. Other fruit, berries, chocolate chips, etc. can be substituted for the blueberries if desired.
Spoon batter into muffin cups and cook in a pre-heated oven at 375F for 20-25 minutes, or until toothpick inserted comes out clean.
Makes 12 medium-large muffins, or about 18 mini-muffins.
