Lower Fat Asian Cole Slaw

Ingredients
1 1-lb bag of shredded cabbage1 small carrot grated4 scallions, chopped1/2 cup applesauce, unsweetened2 tbsp olive oil2 tbsp Rice Wine Vinegar1/2 block of Ramen Noodles crushed1 packet Ramen Noodle Seasoning1/2 tsp black pepper
Directions
Toss grated carrots, scallions, crushed noodles and cabbage together.
in a separate bowl, wisk together remaining ingredients.
Comine dressing and cabbage mixture. Serve immediately.

NOTE: if you anticipate having leftovers, do not add the Ramen Noodles, but serve them on the side as a "topping." this way, you can store the remaining slaw in the refrigerator and just add the noodles as you go. This ensures the noodles stay crunchy.
