Pizza Rice Casserole

Ingredients
2/3 C uncooked Uncle Ben's Whole Grain Instant Rice1 1/3 C water8oz lean ground beef1/4 C onion12oz tomato sauce S&W organic1 teas minced garlic1 pkg steviadash of pepper1/4 teas oregano leaves1 teas parsley flakes1 C low fat cottage cheese4 oz grated Albertson's Mozzarella Cheese part skim
Directions
Cook rice. Brown ground beef & onion. Add tomato sauce and spices. Cover and simmer 15 minutes. Combine cottage cheese and rice. Put 1/3 rice mixture in lightly oiled dish. Top with 1/3 meat-tomato sauce. Continue to alternate layers, ending with tomato sauce. Sprinkle with grated cheese on top. Bake at 325 for 30 minutes or until bubbly. Makes 6 servings (about 10 cups)
