quinoa feta herb salad

Ingredients
1 cup quinoa1 1/2 cup water6 T extra virgin olive oil3 T fresh lemon juice1 clove garlic, minceda large pinch each of ground cinnamon and allspicesea salt and freshly ground black pepper3 ripe tomatoes seeded and chopped1 cup finely chopped fresh parsley1 cup coarsely chopped fresh mint leaves4 green onions thinly sliced1/4 English cucumber seeded and finely chopped1/2 cup crumbled feta cheese
Directions
Place the quinoa in a fine meshed sieve and rinse thoroughly under cold running water.

Transfer to a small pot, add the water and bring to a boil.

Turn the heat down to a simmer, cover with a lid, and cook for 20-30 minutes until tender.

Remove from the heat, place in a bowl, fluff with a fork and cool.

Combine the oil, lemon juice, garlic, cinnamon, allspice, and salt and pepper to taste. Stir into the quinoa.

Add the remaining ingredients and mix gently. Check the seasoning and serve.

Makes 4-6 servings.
