Chicken Breast, no skin, 36 ounces Minute Brown Rice, 2cup dry rice, precooked100% ITALIAN EXTRA VIRGIN OLIVE OIL, 4 tbsp Onions, raw, 1 cup, chopped Green Peppers (bell peppers), 1 cup, chopped Peppers, sweet, red, raw, sliced, 1 cup Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Mushrooms, fresh, 2 cup, pieces or slices Wan Ja Shan Soy Sauce, Less Sodium, 8 TbspEgg substitute, liquid (Egg Beaters), 2 cup Stir Fry Seasoning Two packets
Cook your chicken breast anyway you want and cut into pieces about 1 inch squares and set aside. While the chicken is cooking, make the brown rice per directions on the box. Cook your eggs in a different skillet and seperate in a different bowl. While the rice and chicken are cooking, dice your onions, mushrooms and peppers. Once rice is cooked, in an electric skillet heat the Olive Oil and cook onions, rice, peppers and seasoning for 15 minutes. stirring occasionally. Add chicken, mushrooms, eggs and soy sauce. Stirring occasionally and cover on low heat for another 15 minutes. One cup eguals a serving, makes 16 servings.
